My aim is to eat organically grown foods as much as possible (grown without the use of pesticides, herbicides, fungicides, etc.)

I have discovered that my digestion has improved since eliminating gluten from my diet. It may be that I have celiac disease. Coeliac disease is managed by not eating foods that contain gluten. Gluten is a protein found in some foods that interfere with the intestine's ability to properly digest food.
